How is it spelled?

After coming across a new photo of an ancestor, Sarah A Crockett, I started to think about the spelling of her name.  For years I have seen her middle name spelled in many different ways including:

Ambrosine
Ambrozine
Ambrasine
Ambrazine

Which way is it correctly spelled?  I went through all the official documents that I have and nothing had anything more than her middle initial.  I felt stumped.  Going through a different blog post I came across an official church record for her (Patriarchal Blessing) and see how the name is spelled there.  I feel that this is the way I will now spell her middle name (or is it her first?).  It is spelled Ambrosine.


This brings up something else, on the document it has her name listed as Ambrosine Sarah Crockett.  Could her first name actually be Ambrosine but she went by Sarah?  Her mother's name is also Sarah which would have been confusing.  Was it a mistake on the document?

Further search lead me to her christening record with the St. John Church in Peterborough, Northamptonshire, England.  It lists that her name is Sarah.  From this official record, I believe that her name is Sarah with middle name Ambrosine and spelled just that way (since it's the only document I've found with that spelling).
